Lentil Tacos
This yummy mixture is great for regular tacos or for taco salads. This recipes makes extra for my family of 3 so that I can make taco salads the next day.
1 onion, finely chopped
1 green pepper, finely chopped
2 garlic cloves, minced
2 TBS of water/broth
1 1/2 cups dried lentils, rinsed
1 1/2 TBS chili powder
3 1/2 cups of vegetable broth
1 cup salsa
8-12 taco shells
2 cups shredded lettuce
1 cup fresh tomato, fresh
Cashew cream sauce (optional)
Saute onion, pepper, and garlic in the water/broth until tender in a large non-stick skillet. Add lentils, seasonings, and broth to the onion mixture. Bring to a boil, then cover and reduce heat to a simmer for 30 minutes. Stir occasionally. Uncover and mash half of the lentils and cook for 5 more minutes. Add salsa.
Serve in whole grain taco shells topped with lettuce and tomato. Can drizzle yummy cashew cream sauce over the taco.
